Another little experiment that has come to fruition is my “hot smoked” project. I’ve been drawn to the american idea of “hot smoke BBQ” for some time and when Sam was in the US, had him look for cheap one. The hand made ones are about $1000 (and MORE) …. and that seemed a bit excessive so a cheap one was picked up at “Home Depo” for about $150. It was shifted down by container and arrived a few weeks ago. This weekend was the first time we got to try it. So Saturday was the first run with mixed results (due to following bad instructionsthat came with the BBQ) … but after a bit of reading and internet research we had another go on Sunday. Well … using apple wood as the fuel we hot smoked lamb, beef and chicken. We invited another couple over and combined with hot smoked tomatoes, a crunchy salad and a few glasses of wine well …. they said it was the best BBQ ever. We now have meat for a month…. but tender juicy smoked meat…….
